Salmon with Cilantro salsa
2 large unskined salmon fillets (4 lbs)
¾ lime juice
¾ cup thinly sliced green onions (including 2 pickled jalapeno chiles, stemmed and finely chopped
1 ½ cups loosely packed frash cilantro, minced
1/3 cup olive oil
Lay fillets skin sides down, in a 9 x 13 inch dish. Evenly drizzle 2 TBS of the juice over fillets. In a small bowl, combine remaining lime, green onions, chiles, cilantro and olive oil. Spread ½ cup of the cilantro mixture over a fillet, lay salmon skin side up. Marinate up to one day.
Bake, skin side down, uncovered, in a 350 oven until fish is slightly translucent of wet inside when cut in deepest part (35 to 45 min). Transfer to serving dish, spoon remaining sauce over fish and serve.
