Salmon in Parchment
4 salmon fillets
2 tablespoons lemon juice
½ teaspoon kosher salt
¼ teaspoon pepper
¼ cup soy sauce
1 tablespoon minced garlic
2 tablespoons olive oil
1-tablespoon honey
Mix all marinade ingredients and place in releasable bag. Add salmon and turn to coat. Marinate for 30-60 minutes. Discard marinade. Preheat oven to 450. Set four 10-inch squares of parchment on work surface. Place a filet on each sheet of parchment. Fold parchment over contents; pleat edge to seal, forming a half-moon shape. Place parchment packets on baking sheet and bake for 20 minutes. Serves 4
